In scorching summer days, i remember my father often told me about his chidhood. in the morning in the dry season, he and his friends waited for a khmer woman who carried a bamboo pole on her shoulder with sugar palm juice ( borassus flabllifer) contained in bamboo pipes hung on both ends. she cried out loud, " here is sugar palm juice"The young children each bought a glass, opened the sugar palm leaf covering the bamboo tube and poured the sweet juice into the glass. this juice had the sugary sweet taste and the smell of smoke (local people usually smoked the inner part of bamboo pipes to sterilize them so as to prevent the juice from being fermented
