Waiter seated him it appeared that the waiter (who was wearing a short-sleeved shirt) had a serious skin disease along his left arm; (3) the table cloth was badly soiled from a previous customer; and (4) the author, who had a habit of trying to see if the cook was Thai (and not Australian), had not at this point seen any Thai people in the restaurant well, think for a moment about what was going through the author’s mind. All the tangible cues that this restaurant might use to send important quality signals to new customers were negative, and hence served to increase perceived risk, postscript: the author got up from the table and was leaving the restaurant without ordering a meal (because he was worried about the quality of the food and cleanliness of the restaurant) when a large party of office workers arrived. At this point he decided to stay and had a very enjoyable meal. However the point to note is that this restaurant went very close to losing a customer because the tangible evidence was sending all the wrong signals, thus heightening the new customer’s risk perceptions.
