The combination of heat/ultrasound was applied to thewatercress for the same range of temperatures. The sampleswere blanched with an ultrasound horn (Coleparmer V1A; 13 mmdia) at 20 kHz, and an ultrasound generator (Coleparmer 4710Series) radiating 50% of power (125 W).
