Coconut oil is derived from the seeds of coconut palm, Cocos nucifera. Commercial
coconut oil is made from copra or the dried kernel meat of coconut and goes through
refining, bleaching and deodorizing processes. On the other hand, virgin coconut oil
(VCO) is obtained from fresh, mature kernel of the coconut by mechanical or natural
means, with or without the use of heat and without undergoing chemical refining
(Villarino et al. 2007). Unrefined oil is becoming of great interest today due to
demand by consumers for natural and safe food products.
