Abstract, The HunterLab Citrus Colorimeter, originally developed more than 3 decades ago, was and still is being used for objective measurements of orange juice color. Obsolescence of the electronics used in these instruments, coupled with aging of the available supply necessitated replacement of a number of these colorimeters. Dramatically improved sensor technology and more stable electronic circuitry led to the development of more accurate and reproducible color instrumentation. Several types of these new generation colorimeter from various manufacturers have been evaluated for their performance as alternatives to the Citrus Colorimeter. A portable colorimeter, the Minolta Model CR – 331, employing 0/450 observer/illuminant arrangement was adapted to 1 inch diameter test tubes to measure color attributes for over 400 juice samples, which were subsequently statistically compared with the Citrus Colorimeter values. The regression equations were graphically evaluated. The expression producing comparable results to the Citrus Colorimeter color values was selected as the suggested equation for use with the Minolta CR – 331 instrument.
