4.4.1 Survivor CurvesT he curves establish the relationship between the duration of the thermaltreatment and the number of microorganisms surviving the treatment. Thelogarithmic nature of this relationship was first demonstrated in a study ofdisinfectant activity (Chick, 1910). This principle was later applied to theevaluation of the destruction of spores of C. botulinum by heat (Esty andMeyer, 1922) . However, another 20 years would pass before the decimalreduction time , which is a parameter derived from the survival curve and isnow a universal tool for the complete characterization of the resistance ofa wide variety of microorganisms to thermal treatment, or, for that matter,of any destructive treatment (e.g., disinfectants, ionizing radiation, etc.) ,would be fully exploited in the calculation of the scheduled process forsterilization
