C.Packagedmeatsamples were arranged in a single layer on a carrier which was presented horizontal to an incident, vertical e-beam which passed through the 1 cm thick meat pieces. Fresh meat samples were treated at 1kGyandfrozensampleswereirradiatedat1,3or7kGywitha10MeV e-beam accelerator (Mevex, Stittsville, ON) at Acsion Industries Inc. (Pinawa, MB) and absorbed surface doses were monitored with calorimeters (Risø Labs, Roskilde, Denmark) calibrated and traceable to the National Physical Laboratories, Teddington, Middlesex, UK. The mean absorbed dose during 5 runs targeting 1 kGy ranged from 0.93 to 1.04 kGy. At the 3 kGy target, the absorbed dose ranged from 2.98 to 3.08 kGy and at the 7 kGy target, the absorbed dose ranged from 6.82 to 7.02 kGy. During transportationtotheirradiationfacility,desiredtemperatureswere maintained with dry ice (for samples irradiated frozen) or frozen gel-ice packs (for samples irradiated chilled but unfrozen). C and examined for bacterial survival at2e3dayintervals.Thetreatmentgroupsincludedthecontrol(no lacticacidorirradiation),lacticacidalone(for2/3tests),irradiation alone, and lactic acid plus irradiation, with three replicate meat samples(n¼3)foreachtypeoftreatment.Sinceduplicatesofmeat muscle type, packaging types and injured/uninjured cells were pooled after statistical analyses, replicated treatments were more than further quadrupled.
