Preheat oven to 200 degrees Celsius. Cream the butter and the sugar until pale and creamy. Add the egg and mix until combined. Fold through the salt, flour and coconut. Roll into small balls (about the size of a truffle) and flatten out with your hands. Place your biscuits on 2 large baking trays lined with baking paper. Be sure that they are spaced well apart as they do spread quite a lot. Bake for 12-15 minutes until just starting to turn golden on the edges.Makes 35-40 biscuits.
