The use of enzymes in modifying the nature of food
products has exciting potential. Besides the traditional
uses of enzymes in cheese production, fruit juice clarifi-
cation, alcohol production, meat tenderisation, etc.,
newer uses such as in corn syrup processing, vegetable
protein hydrolysis, flavour modification and fruit juice
processing are finding wide application (Braddock,
1981).
