1. IntroductionThe human diet contains important micronutrients,such as vitamin C, vitamin E, carotenoids and flavo-noids, essential for maintenance of human health. Inconsequence of, the dietary route is a primary meansof modulating endogenous antioxidant protection. Evi-dence in vitro (Sies & Stanl, 1995) suggests that many ofthese compounds can directly react with oxidants andfree radicals showing an important role in modulatingoxidative stress. Multiple dietary sources of these com-pounds are present, in virtually, all plant material.
