INTRODUCTION

The past three decades have witnessed an increased awareness

of problems concerning food pollution. Among them, the heavy

metals are one of the most persistent and accumulative pollutants.

They are natural constituents of earth crust, thus, heavy metals

pollution describes elevated concentrations in different environmental

compartments to a level that is detrimental to living organisms

(Robert, 1991). Human beings are exposed to heavy metals via

polluted air, water and food.

GIỚI THIỆU Ba thập kỷ qua đã chứng kiến một sự nhận biết cao của các vấn đề liên quan đến ô nhiễm thực phẩm. Trong đó, nặng kim loại là một trong những chất gây ô nhiễm dai dẳng và tích lũy. Họ là những thành phần tự nhiên của vỏ trái đất, do đó, các kim loại nặng nồng độ ô nhiễm cao trong mô tả môi trường khác nhau ngăn đến một mức độ nguy hại cho sinh vật sống (Robert, 1991) . Con người được tiếp xúc với kim loại nặng qua không khí, nước và thực phẩm bị ô nhiễm.
