Diacetyl is perceived as a buttery, creamy, milky or butterscotch flavour that can occur in beer. Referred to as brewing’s “original sin” Diacetyl is present in most beers at some concentration and is a natural part of the brewing process. Diacetyl is normally an off flavour however in some beers such as ales and especially stouts it can be seen as a positive flavour.
Diacetyl is formed in beer from a precursor chemical produced by yeast during fermentation. It can also be formed by contaminant bacteria when hygiene standards are poor.
We recommend that all beer sensory panellists are trained with our Diacetyl Beer Flavour Standard, as this flavour is common to all beers as it will alter the profile of the beer when its concentration is outside specification.
To train with this flavour swirl the sample glass to release the aroma and take short sniffs while holding the beer near the nose. This flavour may also be detected by a creaminess mouthfeel on tasting the beer sample.
