I fit a 5' circle in there but there was minimum clearance- Just double checking if this is ok?Since the main area is very narrow- i was thinking maybe we could do bar height communal tables? (see attached) It's all the rage right now Are we planning on leaving the ceiling elements as they are ( I kind of like them so I don't mind, great feature) I've Attached our Kitchen equipment list so that you can get yourself acclimated with what needs to fit in the kitchen area. Here are a few notes of the way the kitchen will flow Fryers, Wok and Range must be all on the same line under a hood. The prep tables with under counter freezer/coolers and the sandwich stations must be directly accessible to the area listed above (like right behind the cooks) In addition, the one compartment sink and a handsink need to be placed near the fryers for batter prep and to ensure hand-washingJust wanted to make note of these before you start so there's less revisions! I am the interior designer for Bonchon and I will be helping you design the space for Hai. A few things before we get started, one, When you create a plan, Please send me the CAD version as well. I understand some companies do not release CAD drawings, but being that we are part of a franchise it is imperative that you do so, and we will not share the drawings with anyone. We would like weekly updates of the space so that we can accurately plan our timeline for opening here. The more we know the easier it is to put marketing and operations plans into effect. No changes or floor plans can be altered without the approval of corporate and we need to approve everything before it is submitted to the city for permits. I will mainly be helping with kitchen equipment (along with operations), approval of layout and helping to select materials and furnishings.
