The oil extracts were able to reduce the stable radical DPPH to a yellow colour,meaning that the oil possessed hydrogen-donating capabilities and acted as antioxidants. As expected, the positive control a-tocopherol had the highest scavenging activity of 99% (data not shown). Results indicated that FE oil and CH oilwith scavenging activities of 95% and 93%, respectively, were almost comparablewith a-tocopherol, while RBD oil had a slightly lower scavenging activity of 81%. Withregard to the EC50 value, the effectiveness of scavenging ability in descending orderwas a-tocopherol FE oil CH oil RBD oil (Table II). There was a significantdifference (PB0.05) in the EC50 values among the studied oils. According to Moureet al. (2001), processing conditions can result in a reduced level of free radicalscavenging activity. Compared with FE oil, the CH oil had gone through moreprocessing steps during sample preparation, such as chilling and heating, and thismight be explained by the lower radical scavenging activity than the FE oil. No datawere available in the literature regarding the scavenging activity of VCO to comparethe result of the present analysis.
