The phenolic acids found in the studied oil were protocatechuic acid, vanillic acid,
syringic acid, p-coumaric acid, caffeic acid and ferulic acid. The amount of phenolic
acids in VCO is presented in Table I. In general, less phenolic acids were detected in
RBD oil compared with VCO samples because some phenolic compounds were lost or
degraded during the refining process. Ferulic acid was the major phenolic acid found
in the studied oils. Ferulic and vanillic acids have been reported present in mesocarp
and leaf tissues of coconut fruit (Dey et al. 2005). Ferulic acid was also identified in
mature coconut husk besides 4-hydroxy benzoic acid (Dey et al. 2003).

Các axit phenolic được tìm thấy trong dầu đã nghiên cứu là axit protocatechuic, acid vanillic,
axit syringic, acid p-coumaric, axit caffeic và axit ferulic. Số lượng phenolic
acid trong VCO được trình bày trong Bảng I. Nói chung, các axit phenolic ít được phát hiện trong
dầu RBD so với VCO mẫu vì một số hợp chất phenolic đã bị mất hoặc
bị suy thoái trong quá trình lọc. Axit ferulic là axit phenolic chính được tìm thấy
trong các loại dầu được nghiên cứu. Axit ferulic và vanillic đã được báo cáo hiện diện trong mesocarp
và lá mô của quả dừa (Dey et al. 2005). Axit ferulic cũng đã được xác định trong
vỏ dừa trưởng thành bên cạnh 4-hydroxy axit benzoic (Dey et al. 2003).
