The rates of most chemical reactions increase as the
temperature is raised. Many organic reactions in
solution lie somewhere in the range spanned by the
hydrolysis of methyl ethanoate (for which the rate
constant at 35°C is 1.8 times that at 25°C) and the
hydrolysis of sucrose (for which the factor is 4.1).
Enzyme-catalysed reactions may show a more complex
temperature dependence because raising the
temperature may provoke conformational changes

organism, and hence destroy it, by the increase in
