In this study, we help to fill that gap in knowledge by determining the
radiation resistance and the D10 values of foodborne pathogens including
Salmonella spp., Staphylococcus aureus, E. coli O157:H7, L. monocyto-
genes, and Y. enterocolitica inoculated into a variety of RTE meat prod-
ucts, which include deli turkey, ham, pastrami, pepperoni, bacon bits,
and beef bologna. Furthermore, using beef bologna as the food matrix,
we examine the growth potential of each of those foodborne pathogens
following irradiation under mild temperature abuse conditions (7◦
C)
