11.5.2 Measurement of Surimi Seafood Pastes
Viscosity measurements can be made directly on the paste of surimi, salt, water, and other ingredients produced from blending in the silent cutter or on a plain surimi–salt–water paste as a quality control check prior to production. The recommended procedure is to use a small tube piston-type (capillary) viscometer (Figure 11.43). The extrusion tubes can be interchanged to adjust the internal diameter to match the viscosity range of the material being tested. In practice, tubes of the same diameter that have the same entrance and exit design, but vary in length, are run consecutively for samples from the same paste in order to account for the entrance and exit effects. The material is then extruded at several different rates by incrementing the speed of the cross head. At each speed, the maximum sustained force reading is obtained.
