Our sample of fast-food restaurants

Our sample of fast-food restaurants from the ES-202 data was drawn as follows. We first selected all records for all establishments in the eating and drinking industry (SIC 5812) in New Jersey and eastern Pennsylvania in the first quarter of 1991, first quarter of 1994, and fourth quarter of 1996. Then restaurants in the sampled chains were identified from this universe by separately
searching for the chains' names, or variants of their names, in the legal name, trade name, and
unit description fields of the ES-202 file.
