Omega-3 polyunsaturated fatty acids are fatty acids that contain multiple double bonds,with the last double bond occurring at the third carbon from the methyl end of the fatty acidchain. Two important omega-3 fatty acids are eicosapentaenoic acid (EPA, 20:5) anddocosahexaenoic acid (DHA, 22:6) (Wen and Chen, 2003). The chemical structures of thesefatty acids can be seen in Figure 2-2.
