Soluble proteins in wastewater streams are more difficult to recover and may need specialized equipment and methods. Membrane technology has improved tremendously over the past decade but there is still the problem of membrane fouling, especially with myofibrillar protein in the wastewater. However, with different pre-treatments, this can be minimized and, in the future, there might be selective recovery of different soluble proteins that have economic value. Recovery of enzymes and bioactive components from surimi waste presents both a challenge and an opportunity. Work must be done to determine the economic feasibility of component recovery and whether markets justify the required capital investment.
