Results of the orthogonal array design tests showed that there were differences in caffeine levels between tea samples decaffeinated by various treatments (Table 3).
Caffeine concentrations in the tested samples ranged from 9.99 - 28.43 mg g-1
, being 31.4 - 89.3% of uncaffeinated sample. Treatment No. 8 (temperature 80°C, extraction time 2 h, tea particle size 0.2 - 0.6 mm, ethanol cosolvent 30 mL) had the lowest caffeine concentration, with 68.6% caffeine removed (Tables 2 and 3). Total catechins concentrations remained in the nine treatments were 5.3 - 14.1% less than control, with treatment No. 3 being the lowest and treatment No. 6 the highest.
