Tóm tắt Trong bài báo này xem xét lại, lịch sử của
cây ô liu và sự phát triển của dầu ô liu chính

1 Lịch sử của cây ô liu
Các cây ô liu là trong số các lâu đời nhất được biết đến trồng
cây trên thế giới (Liphschitz et al. 1991). Trong
quá khứ, nó là biểu tượng của tình hữu nghị và hòa bình
giữa các dân tộc. Ngay từ thế kỷ thứ 7 trước Công nguyên,
người chiến thắng trong các trò chơi Olympic đã được trao tặng một
vòng hoa của chi nhánh ô liu (Fiorino và Nizzi Griffi
1992).
Rất nhiều thông tin liên quan đến xã hội và tôn giáo
vai trò của cây ô liu được đưa ra cả trong Hy Lạp
thần thoại và Cựu Ước . Một trong những huyền thoại
liên quan đến nguồn gốc của tên của thành phố Athens.

Hơn 30 loài cây olive được biết đến

2 Olive phát triển nhà máy và nước thải

2.1 Lịch sử phát triển
Dầu ô liu có được phát hiện bởi các chân đất

Trong thời kỳ Mycenean (giữa ca. 1450 BC
và ca. 1150 BC), quá trình được sử dụng trong dầu ô liu
sản xuất là tương tự như của thời đại đồ đồng.

sử dụng.
Tuy nhiên, khi thời gian trôi qua, sản xuất như

Biển. Người La Mã đã đóng góp vào công nghệ
phát triển trong xử lý ô liu bằng
việc đẩy mạnh hoạt động nghiền với một cối xay
nghiền, các trapetum (Hình 3;. Đặt tên sau khi Hy Lạp
trepo từ, có nghĩa là xoay), và cải thiện các
hệ thống tách với sự ra đời của máy ép
( Kiourellis 2005). Các bằng gỗ hoặc sắt manuallyactivated
ép vít, đầu tiên được sử dụng bởi những người Hy Lạp (50
TCN) và sau đó được cải thiện và phổ biến bởi những
người La Mã, đại diện cho sự tiến bộ lớn trong xử lý ô liu

Trong giai đoạn tiếp theo là sự sụp đổ của
đế chế La Mã và cuộc xâm lược Barbarian, có
là không có sự đổi mới trong xử lý ô liu, trong đó

Cho đến ba thế kỷ qua, sản xuất dầu ô liu
vẫn còn là một quá trình rất khó khăn và một thể chất tuyệt vời
