INTRODUCTIONPineapple (Ananas comosus), native to theSouth American continent, is considered an exoticfruit due to its pleasant aroma and flavour, andcontains water, carbohydrates, sugars, vitamins A,C and beta-carotene, protein, fat, ash, fibre andantioxidants, namely, flavonoids, in addition tocitric and ascorbic acids.1 In Mexico, pineapplecultivation has a long tradition and is of vitaleconomicand cultural importance. Indeed, Mexicois the eighth largest producer of pineapplesworldwide, with 701,746 metric tons (MT).2Unlike other fruits, pineapple has the advantage ofbeing commercialised not only as fresh fruit butalso in various products with high demand in themarket, offering advantages such as added valueuses anda greater market availability of productsbased on pineapple.1 Pineapple products havebeen diversified over the past 30 years, and in
