Executive SummaryThis report is a standing proposal under continuous revision until further notice.It concerns the extraction of phenolic antioxidant compounds from peanut skins. Currently, many of these compounds are manufactured synthetically, while approximately 15,500 kilograms of peanut skins are discarded as waste per week from Virginia area processors alone. Peanut skins contain a number of antioxidants such as resveratrol, dihydroquercetin, catechins, and proanthocyanins. A detailed plan will be outlined in the following report to discuss how these natural antioxidants from peanut skins can be recovered so that they may be turned into a healthy beneficial source of antioxidants
