In the current work, the effect of sodiumchloride on the milk clotting process was studied byincubating reconstituted milk supplemented with this saltat concentrations of 0, 34, 51 or 102 mm. The effect ofsodium chloride at these concentrations on RS was notsignificant (RS ¼ 387, 387, 422, 422, respectively), a findingthat is in contrast with previous data for other rennetsolutions, where clotting time increased with increasingamounts of added NaCl (Abd El-Salam, Alichanidis, &Zerfiridis, 1993; Awad, 2007; Famelart et al., 1999; Zoonet al., 1989). The discrepancy in these results could be theconsequence of working with a lower range of NaClconcentrations, although Famelart et al. (1999) describedthat rennet clotting time increased from 500 to 1100 s asNaCl concentration increased from 0 to 120 mm, a similarworking range to that used in our study.
